Spoon mixture into the prepared tin and level off with a spatula or palette knife. Bake in oven for about 1 hour 15 minutes until a skewer inserted into the centre of the cake comes out clean. Leave to cool in tin for 10 minutes before turning out onto a wire rack to cool completely. Dust with icing sugar before serving. Decorate with coloured sugar balls if desired.

Ingredients: ◦ 300 grams all-purpose flour ◦ 1 teaspoon baking powder ◦ 1 teaspoon baking soda ◦ 1/2 teaspoon salt ◦ 2 teaspoons ground ginger ◦ 2 teaspoons cinnamon ◦ 1 teaspoon allspice ◦ 115 grams unsalted butter, at room temperature ◦ 100 grams dark brown sugar ◦ 1 large egg ◦ 1/4 cup molasses ◦ 1 tablespoon milk ◦ Royal Icing: 3 egg whites • 400 grams confectioners' sugar • 1/4 teaspoon cream of tartar • optional food coloring of choice Directions: 1) In a medium bowl whisk together flour, baking powder, baking soda, salt, ginger, cinnamon , allspice and pepper; set aside 2) In bowl of stand mixer fitted with paddle attachment cream butter on medium speed until smooth; add brown sugar and beat until light and fluffy 3) Add egg; mix well scraping down sides of bowl as needed then add molasses mixing until just combined 4) Reduce speed to low slowly add half of dry ingredients mixture; mix just until incorporated 5) Mix in milk then add remaining dry ingredients mixture; mix just until dough forms 6) Divide dough in half; shape each half into disk then wrap tightly in plastic wrap 7) Refrigerate for at least 2 hours or overnight 8 ) Preheat oven 350 degrees F . line two baking sheets with parchment paper 9)) Working with one disk at a time roll out dough on lightly floured surface to about 1/8 inch thickness 10)) Cut out gingerbread using cookie cutter; reroll scraps as necessary 11)) Place cookies on prepared sheets spacing about 1 inches apart 12)) Bake in preheated oven 10-12 minutes rotating pans top to bottom halfway through bake time 13)) Cool cookies on wire rack 14)) Make Royal Icing following instructions Directions Icing will keep airtight at room temperature up both weeks color as desired 15)) Pipe icing onto cooled cookies using tip of your choice
